Ingredients

  • 400g spaghetti

  • 150g pancetta, diced

  • 2 large eggs

  • 100g grated Parmesan cheese

  • 2 cloves garlic, minced

  • Salt and black pepper to taste

  • Fresh parsley, chopped (optional)

Preparation

Steps:

  1. Boil the pasta: Cook the spaghetti in a large pot of salted boiling water according to the package instructions until al dente. Reserve 1 cup of pasta water and then drain the spaghetti.

  2. Cook the pancetta: While the pasta is cooking, heat a large skillet over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

  3. Prepare the sauce: In a medium bowl, whisk together the eggs and grated Parmesan cheese until well combined.

  4. Combine the ingredients: Add the cooked spaghetti to the skillet with the pancetta. Quickly pour the egg and cheese mixture over the hot pasta, tossing rapidly to coat the pasta and create a creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach the desired consistency.
